Recording video with AirPods on the iPhone

Audio recording via AirPods is not possible with the Apple Camera app.

However, this app from the AppStore helps with this challenge:

It should be noted that the noise suppression of the AirPods may deliver slightly different audio results. For our application, it was great that background noise was filtered out.
